One of the biggest meals we missed originally when we started doing keto was pizza!  This is a great alternate that makes us not miss out on pizza night!  This low carb pizza crust recipe is easy to make in less than 30 minutes.  Follow the instructions and you should have a keto pizza crust that is crispy and delicious!

 

TIPS:

  • Instead of one 12" pizza, use this recipe to make 2 rectangle flat breads.  The crust will be crispier!
  • After the pizza/flatbread is done cooking, let it sit for 8 to 10 minutes to allow the crust to set up.

Ingredients

For 2 Serving(s)

Fathead Crust

3 Cups Shredded Mozzarella Cheese
2 Tablespoons Full Fat Cream Cheese
1 Cup Fine Almond Flour

Toppings

2 1/2 Ounces Ground Italian Sausage
15 Slices Sliced Pepperoni
1 Each Green Onion (Chopped)
1/4 Cup Mushrooms (whole or chopped)
1/2 Cup Marinara (Prego Farmers Market Marinara)

    1. Pre-heat oven to 425 degrees
    2. Hand mix the shredded cheese with the almond flour in a microwavable bowl. Add cream cheese on top and Microwave 50 seconds
    3. Hand mix (spray hands with cooking spray to make dough not stick to your hands or use a glove) and then microvave for another 15-20 seconds until cheese is melted. Cheese should be able to form a ball
    4. Add egg & continue hand mixing until egg is absorbed & dough ball is fully formed.
    5. Heavily spay a flimsy round pizza pan(no holes in the pan) with pan spray.
    6. Place dough ball in the center of the pan, gently press down on the ball while rotating the pan to spread out evenly. Continue until dough reaches the edge of the pan & is even in thickness.
    7. Place in 425 degree oven for 8 minutes or until golden brown.
    8. Let rest for 10 minutes.
    9. Using a flimsy spatula, separate the crust gently by sliding it under the crust, rotating the pan each time. Do not rotate pan while spatual is under the crust
    10. Top (in this order) with
      1. marinara sauce
      2. italian seasoning
      3. sausage
      4. pepperoni
      5. mushrooms
      6. green peppers
      7. green onions
    11. Place in 375 degree oven until golden brown. Between 20-25 minutes, rotating half way through.
    12. Remove from oven and let rest for 10 minutes
    13. Cut and Enjoy
