Ingredients

Cheesy Broccoli Alfredo

1 Bag Frozen Broccoli Flourettes
1 Cup Original Cream Alfredo Sauce

Bits of Yum Chicken

4 Large Chicken Breast
1/2 TBsp Salt
1 TBsp Extra Virgin Olive Oil (EVOO)
1 TBsp Butter
1/2 Cup Dry White Wine (Chardonnay)
1/2 Cup Chicken Broth

Yum Yum Chicken (Basic Sauteed Chicken) with Cheesy Broccoli Alfredo Directions

  1. First, The Cheesy Broccoli Alfredo
    1. Pre-heat oven to 400 degrees
    2. Add 1 bag of frozen broccoli to a 9x9 baking dish
    3. Add Alfredo Sauce and stir to cover all of the broccoli
    4. Cover with Cheddar Cheese
    5. Back until cheese is starting to bubble and turn brown (about 20-25 minutes)
  2. Now For The Bits of Yum Chicken:
    1. Trim the chicken breasts of excess fat. 
    2. Pat the chicken breasts dry with a paper towel.  This will help them brown
    3. Heat a very large pan over medium heat.  
      • Add butter, which should melt and then foam
      • As the butter starts to foam, add EVOO and spread it around the entire pan (this will stop the butter from burning)
    4. Add chicken breasts to the pan.  Continually check the bottom of the chicken breast until it's golden brown, then flip the chicken breast
    5. Cook until the center of the chicken breast is 165 degrees.  If you don't have a food thermometer, you can cut one of the chicken breasts in the middle to ensure it's cooked through.  Warning: DO NOT EAT UNDER COOKED CHICKEN
    6. Remove the chicken breasts and cover them to keep them hot
    7. Add dry white wine to the pan and using a spatula, lightly scrape up the chicken bits on the bottom of the pan.  
    8. Once the wine has cooked down halfway, add the chicken broth.  Periodically stir the pan until the wine and broth turn into a syrupy and delicious sauce.
    9. add chicken to a plate and drizzle syrupy and delicious sauce and little bits of yum(chicken) on top of the chicken
    10. Add broccoli and serve
